Pectin is divided into two types: water-soluble and water-insoluble. Water-insoluble pectin is soluble in sodium hexametaphosphate solution or inorganic acid solution. Protopectin in natural pectin is insoluble in water, but can be hydrolyzed into water-soluble pectin under the action of chemical reagents such as acids, alkalis, and salts. At present, the main extraction methods commonly used at home and abroad include the following: acid extraction method and ion exchange resin method.
